Kimberly’s 90 Second Almond Flour Bread

One of the things people miss most in keto is bread. There are a lot of keto bread recipes out there, including some quick microwave ones, but most are dry.

In my search for a 90 second bread that wasn’t dry, I played around with them and came up with this delicious and buttery one that’s perfect for breakfast. It’s also easy to play with seasonings to come up with some delicious variations!

VERY IMPORTANT NOTE: There is a huge difference between almond flour and almond meal.

~ Almond flour is made by grinding almonds that have no skin, also known as blanched. This results in a flour that is a pale cream color with NO flecks of skin.
~ Almond meal is made by grinding almonds that still have the skin. This results in a flour that is a pale cream color with lots of brown specks.

NO MATTER WHAT THE PACKAGING SAYS, if the almond flour has specks then it is almond MEAL, and using almond MEAL when a recipe calls for almond FLOUR will result in a very dry and crumbly recipe.

Bob’s Red Mill, the almond flour I recommend in this recipe, hasn’t done consumers any favors by labelling their extra-fine almond FLOUR as extra-fine almond MEAL. It isn’t meal, there are no skins in the flour.

Kimberly’s 90 Second Almond Flour Bread


3 tablespoons salted butter
2 tablespoons Bob’s Red Mill Extra Fine Almond Meal (see my VERY IMPORTANT NOTE regarding the difference between almond MEAL and almond FLOUR above this recipe!!!)
1/2 teaspoon baking powder
1 egg


Put the butter in a ramekin and melt it in a microwave at 20 second intervals until it’s completely melted.

Once the butter is melted, stir in the almond flour and baking powder until thoroughly combined.

Add the egg and mix until also thoroughly combined.

Microwave for 90 seconds and remove from ramekin. This is easiest by turning the ramekin upside down over a plate, the bread should fall out. If not, run a knife between the bread and the edge of the ramekin, that usually does the trick.

Let cool, then cut in half to make two round slices.

Enjoy your favorite sandwich! You can also toast this, but keep an eye on the toaster because there’s a lot of butter and the toaster may smoke a little.

Using the extra fine almond meal results in a soft texture, and the extra butter in my recipe makes this very buttery.

To make an herbed bread, add 1/4 to 1/2 teaspoon of your favorite dried herbs to the mix before microwaving. Adjust to your taste preference.

To make a sweet cinnamon bread, add 1/2 teaspoon cinnamon and 1/2 teaspoon keto approved sweetener like xylitol to the mix before microwaving. Adjust to your taste preference.
