2 pounds Brussels Sprouts
1 pound chopped bacon
1 ½ cups walnuts
salt and pepper to taste
Steam Brussels sprouts until tender, then allow to cool and cut in half. Set aside.
While the Brussels sprouts are cooling, fry bacon in a skillet until it begins to crisp. Do not drain, the bacon fat will be used for roasting the Brussels sprouts. Remove the bacon from the pan, reserving the fat.
Toss the sliced Brussels sprouts with the bacon fat and walnuts. Spread in a single layer on a baking sheet, season with salt and pepper and place into a 400 degree oven.
Roast for 10 minutes, then remove from oven and stir. Place back into the oven to roast for an additional 10 to 15 minutes, or until the sprouts are a golden brown.
Remove from the oven and add the bacon. Serve and enjoy!
