I discovered this recipe from Ketogenic.com while at KetoCon 2018 in Austin.  I made a couple of tweaks to it, and it’s delicious!


1/3 cup coconut flour
1/3 cup almond meal
1/4 cup unsweetened cocoa powder
3/4 cup powdered xylitol
1 cup almond butter
1/4 cup coconut oil
3 tablespoons water
1/4 teaspoon vanilla extract
pinch of salt
1/2 cup Lily’s brand chocolate chips
1 teaspoon coconut oil



Line an 8” square pan with parchment paper

In a medium bowl, whisk the dry ingredients

In a separate bowl, microwave the almond butter and coconut oil for 1 minute and stir until both are liquid and well combined.  Add the vanilla extract.

Add the liquid to the dry ingredients and stir until well combined.

Transfer the dough to the pan and refrigerate for 30 minutes.

Melt the chocolate chips with 1 teaspoon fo cocnut oil in the microwave 30 seconds at a time, stirring until completely melted.  Be careful not to microwave too long or the chocolate will seize. 2 to 3 runs of 30 seconds should be enough.

Spread the melted chocolate evenly over the dough.

Keep refrigerated.
