A delicious replacement for hash browns!

Ingredients

3/4 lb. cauliflower, chopped into small pieces
1 medium onion, diced
1 medium bell pepper, diced
1 teaspoon onion salt
1/2 tsp. smoked paprika
1 clove garlic, minced

Directions

Steam cauliflower for 4 minutes, until tender.

In non-stick skillet, add 2 tablespoons of bacon fat.  Once the fat is melted, add the cauliflower and the seasonings and saute until the cauliflower begins to brown.  Stir regularly.  Once the cauliflower begins to brown, add the onion, and bell pepper.

Continue to saute until the onion and bell pepper are tender, stirring regularly.

Serve as a side to your breakfast dish.
