1 pound cauliflower florets
3 tablespoons butter
4 ounces sour cream
1 tablespoon minced garlic
1 cup grated cheddar cheese
½ cup grated parmesan
4 slices cooked bacon, crumbled
2 tablespoons chopped chives
salt and pepper to taste’
Place the cauliflower florets into a microwave safe bowl and cover. Microwave until complete cooked and tender, about 5 to 8 minutes depending on your microwave.
Drain excess water, add the butter, minced garlic, and sour cream and mash until it resembles the consistency of mashed potatoes, using a potato masher or immersion blender. If you prefer this to be fluffier, use a food processor.
Once the cauliflower is mashed to your desired consistency, add ¾ cup of the cheddar cheese, all of the grated parmesan, and half of the chives, then salt and pepper to taste.
Place in buttered baking dish, top with the remaining cheddar cheese, the crumbled bacon and bake at 350 degrees for 10 to 15 minutes, or until the cheese is melted and bubbling. Remove from oven, top with remaining chives, and serve,
